Yes! Two kinds of cheesesss - old cheddar and monterey jack
Mayo instead of butter!
Melted cheesesss. Cooked low and slow.
Just look at the cheese-to-cheese transition zone!
Ketchup topped in sriracha
First time with the mayo thing, it was delicious.
...And they said I'd never amount to anything. I did however clip the hot pan with my knuckles, twice, while documenting the action. ppfftwhateverman

It's beautiful. How is the mayo vs. butter?

typically I use an olive oil spray instead of butter, but the mayo gave it a nice tang, i think I found my new style for grilled cheese.

I may have to try this.
Below is probably my greatest culinary success yet. Bison burger stuffed with velveeta, between grilled cheese(swiss) with ham buns.
I suggest using real cheese instead of velveeta because of how runny it is when mixed with burger grease. I've used muenster in more recent attempts.

That looks amazing! I love bison burgers.
There is a place in town called Cheeses Murphy that makes take-out gourmet grilled cheese. Absolutely phenomenal drunk food at 2am.

Given the Siracha sauce, you probably like a little spice. Have you tried making it with a Jalapeno Havarti cheese ( such as this )? I love it, it really takes a grill cheese up a couple of levels.
